De Fem Stuer, Holmenkollen Park Rica Hotel
During our visit to Oslo, we stayed at the Holmenkollen Park Rica Hotel. Since we took a mini-cruise package which included the mini-cruise, hotel accommodation and breakfast plus one additional meal, we chose to have our dinner at the hotel. The restaurant that was appointed to serve the additional meal was De Fem Stuer, one of their in house restaurant which seems to specialize in fine dining. We were excited to see what kind of culinary adventure awaits us.
De Fem Stuer had already prepared a menu for such dinner package, so the only thing we had a choice on was our drinks. Well, all four of us were up for a culinary adventure, so we were absolutely happy with that. The dinner for our first night was prosciutto with some salad leaves, almond slices and shaved mozzarella for starters and then grilled halibut with orange glazed fennel, chilli marinated squash and walnut foam. It was actually the first time ever for me to have prosciutto and I quite liked it – in moderation. The halibut was delicious with a crispy side and tender meat. For sure, this was definitely an adventure for my taste buds. I have never experienced such combination of taste before. Actually to be honest, if it wasn’t because it was the only menu we were stuck with, I would not have ordered halibut or prosciutto!
The second night was even more delicious. For starters we had tomato consommé with cilantro sorbet and for the main course, they served slow cooked salmon. Ok firstly, that delicious consommé!!! I know I was wrong when I expected some sort of red coloured tomato soup, of course tomato consommé is not puréed tomatoes! The consommé was absolutely heavenly, and the cilantro sorbet was a nice touch as it added to the freshness, both in the taste and aroma. The slow cooked salmon was not bad at all, although to be honest, the consommé stole its thunder.
