Chicken Parmigiana
It was one of those days that I couldn’t figure out what to cook. I looked through my fridge to see what I have, and I found some chicken and some leftover parmesan cheese which I can’t remember what I had it for. Automatically my head put those two together and and decided to look up for recipes calling for those two ingredients. For some reason I must have looked up the words ‘chicken parmigiana’ because on the first page of the search result, I found this recipe by Ree Drummond.
The recipe is so easy to follow, and it has a picture (sometimes more) for every step. I followed the recipe to the letter, even when she said “Stir it together, then stand and admire what you have created, for it is good. For it is very, very good.”
And good it was! Not only to look at, but also to eat. I used four chicken breast, planning to save two for our dinner tomorrow, but that plan went out the window because hubby was so keen on it, he had a second helping. Well, at least I know the food is good! Lucky me, as I only had one helping (due to the limited space in my tummy), I had the rest for my lunch the next day. This recipe is definitely a keeper! And what’s so neat about the Pioneer Woman’s cooking website is that it has a handy tool to print the recipe with a nice layout. I printed it myself and put it together in my favourite recipe folder.
