Lamb Chops on Sautéed Peppers and Onions with Garlic and Mint Basmati Rice
Remember in my review of 2009 I mentioned that I have this thing where I prefer my recipe books to have pictures? Well in that post I also promised myself that I would try more recipes from the books I have collected over the years.
And the first time I fulfilled this promise was by trying out a recipe from Rachael Ray 365: No Repeats – yes, the book with too few pictures – and I was really happy with the outcome. Not only did I get a very delicious meal out of it, I also got a picture of it
which I will print and staple on the recipe page
The recipe called for lamb chops (obviously), ground cumin and coriander, paprika, green bell peppers, yellow onion, cherry tomatoes, flat-leaf parsley, garlic, chicken stock, couscous (I replaced it with basmati rice instead), fresh mint and pine nuts.
The lamb is spiced with salt and pepper, ground cumin, coriander and paprika. It is then fried to your liking. The cut green bell peppers and onions are stir fried and seasoned with salt and pepper before adding the tomatoes and half of the parsley, and continued to be cooked until the tomatoes’ skin begin to burst.
The rice is cooked with garlic and chicken stock, while the fresh mint, rest of the parsley, mint and pine nuts were added at the end after the rice is done. And voila! Dinner is served!
