Dinner Tonight: Spaghetti Carbonara with Mushrooms

Tonight’s dinner recipe is taken from Periplus Mini Cookbooks ‘Fast Pasta’ edition. However, the ‘how-to’ bit follows Nigella’s tips in one of her cooking videos. Not only is this fast, but it’s also very yummy.

Ingredients:

  • 8 bacon rashers
  • 180 gr sliced button mushrooms
  • 2 tsp chopped fresh oregano
  • 4 eggs, whisked
  • 250 ml cream
  • 65 gr freshly grated Parmesan cheese
  • 500 gr spaghetti

Cook the spaghetti until al dente. Meanwhile, trim the bacon, cut into small pieces. Fry until lightly browned, and then add the mushroom, cooking until they’re soft. Separately, mix the whisked eggs with the cream, cheese and oregano.

Add the cooked spaghetti to the pan, mix thoroughly with the mushroom and bacon. Remove from heat, add the combined eggs, cream, cheese, and oregano and stir to mix. The spaghetti should be hot enough to help thicken the sauce. And voila! Dinner is ready to be served!
