Quick Food: Simple Fried Chicken

If quick food using instant ingredients appal you, stop reading right now and close your browser or click away from this page. Because tonight, my hubby and I, despite of it being a weekend, were not really up to cooking anything complicated.

Earlier today, we went out to check out the new mall down the road, Pejaten Village. After I made up a week long menu, based on which I wrote up a shopping list, we went out to the new mall to do our shopping. Not many shops were open, among the few are J-co donuts, Korz (clothes shop), Solaria restaurant, Matahari department store, Hypermart supermarket and Cinema XXI – yes, a cinema right around the corner! Yippie! So, after I spent 20 minutes buying eyeliner, 3 shirt dresses and 2 belts (successful shopping happens when I am not really looking), we checked out the cinema for what they were showing. I spotted “Seven Pounds” with Will Smith, and since I remember some good reviews on it, we ended up buying tickets to the next available show which was right then at 12.30 (talk about great timing!).

Anyway, after the movie, we did what we originally wanted to do: shopping for the week ahead. The supermarket had everything I needed except canned tomatoes. Other than what was on the shopping list for the one week menu, I bought some chicken thighs which is one of our reliable quick food for lazy days. Today was one of those lazy days.

It’s the simplest, easiest but tasty way of cooking chicken: just salt and pepper (I am really generous on both) fried in butter. At first I let it fry with high heat to get it going but then let it simmer, covered, with very low heat for about 25 minutes.

For the gravy, we just used a ready made instant one: turkey gravy by French’s. We also had some (frozen) vegetables on the side, and basmati rice, and some remoulade for different taste now and then. My kind of food: simple, easy to make, great taste! Yum!
